Matt’s Authentic Mexican Rice

1-½ Blue Ribbon White Rice
1 cup Myrtle Creek Nursery Black Bean and Corn Salsa
1 Box Chicken Broth

Brown the Rice in an oven safe pot with 2 Tablespoons of Olive Oil, add broth and salsa, (you can use more salsa if desired), bring it all to a boil. (You can also add frozen peas, cubed carrots, etc. if desired).

Put the pot in the oven and bake at 350 for 20 minutes.

Goes great with Tacos!
